Egg in eggplant
A delicious idea for a quick healthy breakfast!
You'll need this:
- 1 eggplant
- 1 tablespoon olive oil
- 2 eggs
That's how it's done:
Wash the eggplant and cut out 2 thick slices (about 2 cm). Heat olive oil in a frying pan. Fry the eggplant slices on both sides for about 3-4 minutes. Season with salt and pepper.
Cut a hole from the eggplant in the center of each slice. Crack an egg into each. Allow to set for a few minutes, then carefully turn over to the other side.
